LSB7003 - Pediococcus


Pediococcus is a lactic acid bacteria with a strong acidifying power despite its low acidification speed. It has good tolerance to hops (25 IBU and less). Its diacetyl synthesis is such that it must be used in mixed fermentation with active Saccharomyces or Brettanomyces.*

Unlike yeasts, our bacteria are sold by the liter rather than by the cell. We recommend a pitch rate of 1L of bacteria per hectoliter of wort or beer to sour.
