Brettanomyces bruxellensis is a strain from the region of Brussels that produces horse blanket and stable aromas typically associated with this species of microorganism. Generally used in mixed fermentation with Saccharomyces cerevisiae and/or lactic acid bacteria, it will express its full aromatic potential after several months of aging.
