A NEW CHALLENGE FOR BREWERS

The production of non-alcoholic beers requires brewers to adjust their vision of brewing to new procedures, which brings its share of challenges.

Several costly technologies, such as reverse osmosis, are used to remove alcohol from beer. Given that these technologies are not adapted to the reality of brewers, the processes proposed by Le Labo consist of using atypical yeasts, which produce very little alcohol, while replicating the organoleptic profile of typical beers.

A SIMPLE PROCESS THAT IS WORTH THE EFFORT

To brew non-alcohol beers with our yeasts, you will need to adjust your wort production process and have very strict hygiene practices.

Then, it is essential to stabilize the beer produced, either chemically or thermally (pasteurization), to avoid refermentation after packaging.

Finally, we strongly recommend to test your finished products for alcohol concentration with a proven analytic method to make sure that they respect your local legislation for non-alcoholic beers.

OUR STRAINS FOR ALCOHOL-FREE BEVERAGES

LSB8001 - HANSENIASPORA UVARUM

This atypical yeast has been isolated from maple water and can only ferment glucose and fructose. Its aromatic profile leaves tropical fruit and pear notes, as well as a hint of vanilla which makes it an excellent candidate for the elaboration of non-alcoholic IPAs or non-alcoholic sour beers.
